1 15 oz can chickpeas, rinsed and drained
2 tbsp extra-virgin olive oil
1 tbsp tahini
1/2 lemon, juice of
1/2 tsp garlic powder
1/4 cup Himalayan Pink Salt Sun Poppers, crushed into powder
1/4 tsp salt
1/4 tsp pepper
1/3 cup celery, diced
1/4 cup red onion, diced
- In a food processor, crush the Sun Poppers until a powder is formed.
- In a large bowl, combine chickpeas, olive oil, tahini, lemon juice, garlic powder and Sun Popper powder and stir, then smash lightly with a fork until you reach your desired consistency.
- Add in salt and pepper, to taste, as well as diced celery and diced red onion. Mix together.
- Serve in a sandwich or lettuce wrap with your favorite toppings (i.e. cucumber slices, vegan mayo, avocado, sprouts, greens, etc.)!
